It's a meat muffin

It's a cupcake! No, it's a muffin! Wait, it's… meat?!
Yes, believe your eyes.  It's a meat muffin. 



Now, I've been looking for a way to carry around lunch in my pocket to become one of the cool kids. I think I finally figured out how to do it.



Don't be fooled, they might look like a large meatball -- for all intents and purposes they practically are -- but these little meatloaf muffins so much more. They are baked in a muffin tin and glazed to give you that down-home happy meat loaf moment. 

Some chopped green peppers and an onion is really all that's needed in these bad boys and they pack a ton of flavor. For a touch of spice I made a glaze of ketchup honey and chipotle adobo. The honey glazed over in the oven and it became sweet spicy and sticky. Something simple that really elevated it. 

But, let's be honest. I just can't wait to turn it into a sandwich.



Meatloaf Muffin
Makes 6.
Total Time: about 45 minutes

Meatloaf:
1 package meatloaf mix (ground veal, pork and beef) 
¾ cup yellow onion, finely chopped (about ½ onion)
½ cup green pepper, finely chopped (about ½ pepper)
1 clove garlic, finely chopped
1 Tbsp flat-leaf parsley, minced
¾ cup breadcrumbs, plus more if needed
1 egg, lightly beaten
1 ½ tsp kosher salt
fresh cracked black pepper, to taste

Glaze:
¼ cup ketchup
2 Tbsp honey
1 Tbsp adobo sauce (for hotter glaze mince 1 chipotle)
1 dash worcestershire sauce

Method:
Have oven preheated to 375.
Have prepared a 6-muffin muffin tin
1.)  In a large bowl, combine meatloaf mix, onion, green pepper and garlic. Using your hands or a wooden spoon mix together until all of the ingredients are evenly distributed.
2.)  Add parsley, breadcrumbs, egg and season with the salt and pepper. Mix again until all the egg and breadcrumbs are evenly distributed.
3.)  Divide mixture into 6 pieces and place into the muffin tin, mold the top so it looks like a loaf.
4.)  In a small bowl, combine the ketchup, honey, adobo and worcestershire sauce. Set aside.
5.)  Bake meatloaf in 375F oven for 10 minutes. After 10 minutes apply the glaze and bake for another 25-30 minutes, reapplying the glaze once or twice during the cooking process. Cook to an internal temperature of 155F.
