Cooking 101: Tomato Sauce

A simple tomato sauce, or pomodoro sauce is one of the best things you can have in your arsenal of recipes. It's a simple go-to for a quick and easy dinner or a way to have a delicious  date night.



It can go with your favorite pasta or you can put it on a pizza. The possibilities are about as limited as your imagination. So put down the bottle of Prego and give this a try.


Now, this recipe isn't the "mother sauce" that we learned about in culinary school, in fact it's much simpler. To be honest, this recipe is about as simple-stupid as it gets. I learned it from a food-writer who learned it from someone else, etc. So I'm not taking credit for it. I just want to pass it on. 

You can easily double the batch and then portion it and freeze it so you can have it on hand whenever you want.

San Marzano tomatoes are the best ones you can buy. They are a type of tomato that is controlled by the Italian government, regulated to ensure quality. They'll cost you a little bit more at the store, but their flavor is worth the cost if you can afford it. If not, any whole peeled tomatoes will do.

Keep in mind that when you store tomato sauce it's important to have the sauce cooled down to room temperature before chill it. If not, tomato sauce can become sour if chilled to quickly.


Simple Tomato Sauce
Makes: about 2 cups
Total time: 35 minutes

Ingredients:
1 28oz can whole peeled tomatoes, San Marzano prefered
½ yellow onion, peeled
4 Tbsp butter, unslated
2 tsp kosher salt, or to taste

Method:
1.)  In a medium, heavy bottomed pot add the tomatoes. onion half and butter. Increase heat to bring to a simmer. 
2.)  Simmer, stirring once in a while for 35 minutes and seasoning with salt as needed, until the onion is soft and the tomatoes are broken down.
